A SPECIAL SPRING RECIPE!!

Shrimp Veronique

This is a great recipe which you can use as a first or main course.

*2 lbs. Med. Large raw shrimp, shelled and deveined
*1 cup sour cream
*1 cup mayonnaise
*2 cups seedless green grapes washed and patted dry.
*1/2 cup chopped fresh dill, or more to taste
*salt and pepper to taste
*lettuce leaves

  1. Bring salted water to a boil and drop in the shrimp.

  2. Wait 1 minute, empty the pot into a colander and set it in the sink. Let the shrimp cool in the colander.

  3. Transfer the cooled shrimp to a bowl.

  4. In a separate bowl whisk the sour cream and mayonnaise together.

  5. Pour the dressing over the shrimp and toss gently.
  6. Add the grapes and toss again.
  7. Finally, sprinkle in the chopped dill, add salt and pepper to taste,, toss one more time and refrigerate covered for four hours.
  8. Just before serving, taste, correct seasoning and toss again.
  9. Arrange on lettuce leaves and serve immediately.
