Basic BBQ rub (see below)
4 to 4 1/2 whole broiler-fryer
Chicken
1 can (12 oz.) beer
BBQ Rub:
1 tb. Paprika
2 tsp. Salt
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
1/2 tsp. Pepper
Mix rub ingredients.
Preparing and grilling the chicken:

If using a charcoal grill, place drip pan directly under
the grilling area, and arrange coals around the edge of
the fire box. Heat coals or gas grill for indirect heat.

Prepare the basic barbecue rub.
3.
Fold the wings of the chicken back with wings touching.
4. Sprinkle rub inside cavity
and and all over the outside of the chicken, rub with your
fingers.
5. Pour 1/2 cup of the beer
from the can (you can drink it if you prefer).
6. Hold the chicken upright,
with the opening of the body cavity down, insert the beer
can into the cavity.
7. Insert a BBQ meat thermometer
so that the tip is in the thickest part of the inside of
the thigh muscle but make sure that it is not touching bone.
8. Cover and grill the chicken
upright over the drip pan or over the unheated side of the
gas grill and 4 to 6" inches from medium heat for 1 hr.
and 15 mins. To 1 hr. 30 minutes or until the temperature
reads 180 degrees and juice is no longer pink when the center
of the thigh is cut.
9. Using tongs, carefully lift
the bird to a pan, holding a large metal spatula under the
beer can for support.
10. Let stand for 15 minutes
before carving. Remove the beer can and discard! Makes six
servings. Enjoy!
TIPS FOR KEEPING SAFE!
Following the following tips will ensure that the grilled meat,
poultry and fish that you serve is safe to eat.
Trim visible fat from the meat to avoid flare-ups
Always marinate foods in the refrigerator and not on the counter!
Always serve grilled meat, fish or poultry on a clean plate.
Never serve or place cooked meat from the same unwashed plate that
you used to carry raw meat!
If you want to reuse a marinade that has had raw meat in it, heat
the marinade to boiling, then boil one more time before serving.
Perishable food should be eaten with 2 hours, or 1 hour if the
temperature is over 90 degrees.
